See that beautiful plate of food in the picture above? That was whipped up for me by Stephen at BlogHer last month. I was hungry, having gotten to the official lunch buffet a little late and wandered into the Expo Hall looking for something to eat.
The friendly folks at the Hillshire Farm booth not only took pity on me, but cooked up a lunch fit for queen with my choice of meat and veggies. This is the Gourmet Creations Chicken Apple sausage sauteed with veggies over a bed of sauteed spinach. It was a perfect lunch. I even felt virtuous for eating something so healthy!
My Hillshire Farm Creation
I’ve been buying the Hillshire Farm sausage products for many, many years. My husband likes to make beer sausage for game days (just what it sounds like — cut the sausage into bite size pieces and boil in beer for a little extra flavor). I make a family dinner favorite we call Sausage & Bean soup.
| Sausage Bean Soup |
- 1 Hillshire Farm Sausage Link (any variety – I used turkey)
- 1 15 oz. can of black beans, drained and rinsed
- 1 15 oz. can of Great Northern beans, drained and rinsed
- 3 cups of fat free chicken broth
- Cut the sausage into bite sized pieces.
- Combine the ingredients in a 3-4 quart saucepan and bring to a simmer.
- Simmer for 30 minutes and serve.
If you need to stretch the soup for a larger family, add another can of beans and more chicken broth.
Serve with a salad and crusty bread.
I forgot to take a picture of the soup, but trust me it is very delicious! My kids loved this recipe growing up and I loved that it was a quick meal to make after a day in the office.
